Recipes

As the kitty claws at my elbows (at least he's not on the keyboard right now):

Meat & Potato Quiche

2 lg. potatoes, shredded
2 T. oil
1 lb. sausage, browned (or ham, hamburger, etc)
1 c. shredded cheddar cheese (or swiss)
2 eggs
1 c. milk
salt & pepper, to taste

Shred potatoes into a pie pan. Add oil and mix, then shape around the pan like a crust. Bake at 425 for 15 minutes. Remove from oven and add sausage and cheese. Mix milk, eggs, and seasoning and pour over. Bake at 425 for 30 minutes.

Corndog Casserole

1 1/2 lb. hotdogs (we use half cheese hot-dogs and half beef)
2 T. butter
Minced onions, to taste
2 Pkg. Jiffy cornbread mix
2 eggs
1 1/2 c. milk
8 oz. cheddar cheese, shredded

Brown hotdogs with butter and minced onions. Mix cornbread mix, eggs, and milk. Add most of hotdogs and cheese to cornbread mix. Pour into greased 13 x 9 pan. Top with remaining hotdogs and cheese. Bake at 400 for 30 minutes. Yummy
